There are thousands of Chinese soup but they are prepared in 4 S.O.P. steps:

Standard Operating Procedures (S.O.P.):

1) Preparation of Ingredients
2) Bring to a boil over high heat
3) Turn to low heat and simmer for (T) hours
4) Turn off heat. Season with salt.

♡ Adding salt is always the last step.
♡ T = from 1.5 hours to 3 hours, depending on cooking time needed to cook the harder ingredients (meat, hardy legumes…)
Note: softer ingredients (tomato, potato…) can be put in the last half hour to prevent over cooking.

Example 1: 雪耳银杏无花果煲瘦肉汤
White Fungus Soup with Lotus Seed and Chinese Mushroom

White fungus (19 gm): soak and rinse few times until fully expanded. Drain and set aside.

Dried Chinese mushroom (8 pc): soak until soft and squeeze dry. Repeat this step few times and set aside.
