新加坡”米其林”油鸡

行行出状元, 小贩油鸡也能登上世界美食”米其林”大雅之堂。

成功的油鸡: 皮脆肉嫩, 美味肉多汁

油鸡的三大步骤:

1.鸡处理:
◇ “三温暖” 拉皮 – 鸡在沸腾的水里浸泡/拉出水面 (重复三次), 最后浸热水30秒, 取出泡冰水。

2.豉油(chǐ yóu)汁:
◇ 生抽 : 老抽 = 2 : 1 (+ 40克 冰糖) [用量杯大约汁量够盖2/3 鸡身]
◇ 倒入豉油汁, 大火煮滚。
◇ 放入鸡 (胸向上), 转最小火 煮20分钟(*)。
(*) 不要煮超过20分钟, 鸡肉会变硬
◇ 重复大火煮滚。
◇ 反鸡身 (胸向下) , 加1杯冷水降温,熄火焖 15分钟。
◇ 鸡取出, 通风吹干30分钟。

3.豉油鸡:
◇ 上色: 鸡身凉后, 才塗上豉油汁。
◇ 待30分钟, 上盘。
